What better for a pairing, then gourmet popcorn and artisan marshmallows. It's a huge trend at the moment, and I'm not surprised, because I am totally obsessed with gourmet popcorn. Especially our friends at <a href="http://www.popcornkitchen.co.uk/popcorn-kitchen-popcorn-flavours/sweet-salt-popcorn-from-popcorn-kitchen.html" target="_blank">Popcorn Kitchen's Sweet and Salt flavour</a>. Popcorn Perfection.<br />

So, whilst munching through a whole bag, I realised how amazing it might be to combine my favourite flavours into a gooey treat with our delicious gourmet marshmallows.<br />

Ingredients:<br />

<li>First things first, I emptied a large bag of my favourite (Salt & Sweet Popcorn from Popcorn Kitchen) into a bowl minus a few pieces (because I just cant help myself).</li>
<li>Then I took two bags of our raspberry marshmallows and but them in a pan on a low heat with 50g of butter until melted.</li>
<li>Stir the two together!</li>
<li>Lay some clingfilm over a tray and spread the mixture to a good thickness. Then cover with more cling film and place into the fridge.</li>
<li>Or: to mould into balls I tore off small squares of clingfilm and dolloped tablespoons of the mixture into each square and scrunched them up into a ball.</li>
<li>Leave in the fridge to set over night.</li>
<li>Pull the bars out of the fridge and cut into squares.</li>
<li>Melt some chocolate in a pan and dip one end of each bar into the melted mixture (delicious).</li>
<li>Lay onto the baking paper and leave to cool.</li>
<li>EAT.</li>

After thought:<br />
I loved them! I can’t wait to try them with the other flavours. I’m thinking passion fruit and coconut dipped slowly into creamy white chocolate. A proper grown up treat!<br />

The name says it all – give me some more!<br />

S'mores are an American invention made up of two biscuits, with a toasted marshmallow and a square of chocolate sandwiched between them. The aim is to get the hot gooey marshmallow to melt the chocolate to make the most amazing ‘sandwich’.<br />

And boy do they taste good! Americans traditionally use what are called ‘Graham Crackers’ for their S’Mores. So I did some research and tried out a recipe from <a href="http://smittenkitchen.com/blog/2009/05/graham-crackers/" target="_blank">Smitten Kitchen</a> – one of my go-to blogs along with <a href="http://bravetart.com/" target="_blank">Brave Tart’s</a> blog. Funnily enough, both of them now have cookery books out and I think for good reason – always interesting, well researched and delicious recipes.<br />

Graham Crackers are a brown-sugar based, cinnamon sugar topped biscuit not unlike a digestive in texture. (You can see my version of Graham Crackers below).<br />

They came out tasting fine, but a little too thick so they lacked the ‘snap’ I was looking for – note to self – next time roll them reeeeallly thin.<br />

If you don’t want to go to the bother of making your own you can use any other biscuit that takes your fancy. We did a mini-poll on Facebook and the favourite suggestion was chocolate digestives – which sounds good to me – a double hit of chocolate! Other suggestions were Rich Tea biscuits, Lotus biscuits, or those plain-ish Marie biscuits (does anyone remember those?) We tried Amaretti biscuits too for sweet little mini S’Mores - see pictures below!<br />
<br />
So, for your own magical campfire S’Mores kit, put together the following:<br />

To make your S’Mores, lay a square of chocolate on a biscuit, toast your marshmallow until gooey, lay it on top of the chocolate, then top with your other biscuit, using it to hold the marshmallow in place while you pull out your skewer. Eat!<br />

For a truly posh S'mores experience - try different biscuits and chocolate. I combined (my favourite) Amoretti biscuits with dark chocolate and our buttery salted caramel marshmallows to create these heavenly S'mores bites!<br />

What an amazing roller coaster the last few weeks have been! So much has happened it’s hard to know where to begin.</div>

I do find it hard to keep things in perspective sometimes when it comes to the business. I think it’s because there is so much of <i>me </i>vested in it - I don’t think I have ever had a job that has meant more to me. So all the highs are exaggerated – and equally so the lows. Luckily my partner Dave helps me to keep some kind of perspective on things!</div>

I must say there have been way more highs than lows. And if I’m honest, the lows have been down more to my own fears and imagination than anything else. Getting the Monster Mixer and the rack was a big step forward. All of a sudden we can produce waaaaaaaay more marshmallow than we used to! Which is just as well, because the other thing that seems to have happened is a rise in orders. It’s been weird that – because I have been working full-time whilst trying to build the business, every new order has felt like a really positive ‘Yes!’ as well as an ‘oh my god – how am I going to fit THAT in?’ It has been a real stretch having a full-time day job and a full-time evening/weekend job. </div>

Which brings me to the next fabulous-yet-terrifying event – going part-time! Apart from a couple of years when my son was little (he is now 14) I have always worked full-time for someone else. With Little D definitely on the up, I decided that (to avoid being hospitalised) I just had to take the plunge and reduce my hours. I don’t expect, to be honest, that I will be working any less hard. But it will be so liberating to be able to spend some of my working week focusing on growing the business! I have definitely (as the entrepreneur books say) been working ‘in’ the business rather than ‘on’ the business! It all starts on Monday – which is, coincidently, my birthday! Yay!!!</div>

So on the 22<sup>nd</sup> August, we are heading off to The Four Seasons hotel (we have splashed out on a room – EXPENSIVE! Hope it lives up to the reviews!!) to find out if we have won. And before then I have to (gulp) meet one of the judges for a chat and (even bigger gulp) have a TV crew coming to our base to make a short film! How many pounds can I lose before-hand I wonder? Maybe if I just eat fat-free fruit marshmallows I could reach my target. Yes – that’s it!! The Little Delicious Marshmallow Diet! It’s got to be better than cabbage, surely?</div>

There is no doubt that the Monster Mixer was intimidating. It took 3 of us (yes - 1 woman and 2 <strike>boys</strike>men) to lift it on to the work surface. And it was only really when it was sat next to my now oh-so-small Kitchenaid mixer that I realised how ENORMOUS it was!<br /><br /><a name='more'></a><br /><span style="text-align: center;"> It's a Hobart mixer - second-hand, with some serious repairs at the back (maybe I should call it Robo Mixer....) but it is amazingly quiet! </span><br /><div class="separator" style="clear: both;">

Using it for the first time was....scary! With marshmallows, <b>everything </b>makes a difference - even the type of whisk you use! It seemed slower than the Kitchenaid at first, and given that it can make four times the volume, I thought it would be slower - how wrong was I! The first batch of marshmallow I made was whipped to the point of glue - check out the whisk....</div>

<b><u>Made in Hampshire </u></b>Created almost by accident, these heavenly marshmallow squares are threatening to knock cupcakes off the tea tray podium, as Elizabeth Barnett found out.<br />
Lin Clark has always loved cooking, and especially experimenting with different recipes so when she came across one for raspberry marshmallows, she was intrigued to try them out. She was so impressed with the results she tested them on friends and family and they went down a storm. Before Christmas last year she found herself making and selling several hundred bags to colleagues, and after a brain-storming session with her family, came up with the name Little Delicious.</blockquote>

"After Christmas I picked up the phone and started making calls to farm shops and cafes in the local area," says Lin. "It was a bit nerve-racking at first as I am not a sales woman, but I really believed my product was exceptional - and luckily, the public seem to agree. I now sell through a growing number of outlets in Hampshire, and as far afield as Wales and Kent." </blockquote>

For Lin, the best thing about marshmallows is that they are incredibly versatile. With the raspberry flavour selling so well, she started experimenting with different recipes and flavours until she came up with exactly the right texture and taste. Some of the most popular flavours include Lemon Meringue and Salted Caramel Heaven but she had to draw the line at Beer Marshmallows, concluding that it was perhaps taking the flavour combination a bit too far. </blockquote>

Lin spends time on Little Delicious by night, and is a project manager by day, working on a fostering project for eleven local authorities in the South East. She says: "I really enjoy the contrast between my day job and night job - I suspect though that I may need to give up the day job soon as I am struggling to meet demand." With a house full of tubs of glucose and ingredients, it certainly sounds like she may need a place to expand. Gourmet marshmallows have been labelled as the 'new cupcakes' in America and so it will only be a matter of time before the trend for these virtually fat-free treats hits the UK. Lin is well prepared for when it does: "I haven been talking to a family-run confectionery producer in Yorkshire about working with him to improve the shelf-life and increase production. I am also developing new packaging and a boxed range, as I think gourmet marshmallows offer a new and attractive alternative to boxed chocolates as gifts." </blockquote>

I know nothing about photography, and I really had no idea just how involved it was. Mind you, this was a proper photo shoot - rather than a point-and-shoot (which is my normal approach - and that's with the camera on my phone!)<br />

I discovered that REAL photography involves a myriad of lenses, a scrim (wait dear reader, and I will enlighten you with my new found expertise), step ladders, lying on the floor, and a shed load of greaseproof paper.<br />

Simon and Brook from 3 Men and a Suit were definitely the real deal. Simon told me that the previous day he had been photographing a wedding at St Paul's cathedral! My marshmallows were, indeed, honoured.<br />

The shoot started with the raspberry, and a decision over which surface to place them on. The chopping board was selected as having enough-but-not-too-much texture and after a light sanding (I kid you not) it was put to good use.<br />
<br />
We started with the raspberry before moving on to the mocha. Each flavour was lovingly stacked and restacked, and a scrim* was employed to get the light just right. Some of them just wouldn't play ball and it was literally a case of Simon trying to shoot whilst they were stood to attention...<br />

Well, I sort of feel like the wave may have started. Which is the MOST AMAZING feeling. Last year, just before Christmas, we sold loads of marshmallows, and had lots and lots of really positive feedback. Well, guess what? It really IS going somewhere. Yesterday, I went to see a couple of potential customers, clutching my Pink Box of Delights. And it would seem that both Portsmouth and Chichester will be enjoying gourmet marshmallows from Little Delicious! <br />

And what's really exciting (for me at least because I LOVE developing new flavours) is that we will be creating two new flavours especially for them. I have already had some steer from Michelle, CFT's lovely Front Of House Manager, and have started thinking up some new ideas.....<br />

We will actually making marshmallows for Caracoli to sell under their own brand - which is an honour for us as Caracoli are such an up and coming - and such a discerning - brand. Well.....maybe a slight exaggeration.....but I was dead chuffed with how the lemon meringue marshmallows went down at the Old Thorns Wedding Fayre! I know I am partisan, but they really are yum - and everyone who tasted them seemed to agree! The strawberry marshmallows and the coconut ones disappeared fast too....<br />

This summer has been one sugar-crazed marshmallow fest. Marshmallows take a while to get the hang of, but after much trial and error I seem to have perfected the balance of flavour and gelatin. The key to melt in the mouth marshmallows (rather than the rubbery bullets you get in the shops) is not using too much of the gelatin. And the key to really flavour-packed marshmallows is to use good quality ingredients - like the freeze-dried strawberries that coat the strawberry marshmallows, or the home made lemon curd that is layered through the lemon meringue marshmallows.....<br />

On Saturday we held our 'Champagne and Favours' event and trialed our new gourmet marshmallows on a small but lovely group of willing tasters. The verdict......scrumptious! And thank goodness for that! Because now maybe someone other can me can eat them (I am seriously turning in to Mrs Staypuft, the Marshmallow Girl.....ever see Ghostbusters?)<br />

I am really genuinely excited about these. It has taken a lot of research and trial and error to come up with the best recipes, but homemade marshmallows are just so much better than the shop bought variety - and they can be made in such amazing flavours!<br />
<br />
For the tasting on Saturday, I made:<br />

<li>champagne and roses chocolate marshmallows dipped in belgian chocolate </li>
<li>vanilla marshmallows made with a real vanilla pod</li>
<li>strawberry/raspberry marshmallows made with fresh strawberries and raspberries and topped with freeze dried strawberry pieces</li>
<li>honey marshmallows, made with greek honey and cut in to pretty heart shapes</li>
<li>coffee marshmallows, made with roasted coffee beans</li>
</ul>
The favourites were...chocolate ('pillowy chocolate heaven')....strawberry/raspberry ('my favourite - taste like summer!')....and coffee ('these are yummy - can you make a coffee liqueur version?'). We have put a link and some prices on the website now if you are interested in ordering.<br />
