Well.....maybe a slight exaggeration.....but I was dead chuffed with how the lemon meringue marshmallows went down at the Old Thorns Wedding Fayre! I know I am partisan, but they really are yum - and everyone who tasted them seemed to agree! The strawberry marshmallows and the coconut ones disappeared fast too....
This summer has been one sugar-crazed marshmallow fest. Marshmallows take a while to get the hang of, but after much trial and error I seem to have perfected the balance of flavour and gelatin. The key to melt in the mouth marshmallows (rather than the rubbery bullets you get in the shops) is not using too much of the gelatin. And the key to really flavour-packed marshmallows is to use good quality ingredients - like the freeze-dried strawberries that coat the strawberry marshmallows, or the home made lemon curd that is layered through the lemon meringue marshmallows.....
